Winemaking
The grapes were hand-picked perfectly ripe, sorted, destemmed, gently pressed and fermented at a temper-ature between 22-26°C and then aged in French oak tonneaux and barriques (predominantly new oak and of second use) for 18 months.

Style
It is a hedonistic wine. A wine that is meant to be inspected, shy at first and then it reveals itself in all its personality and structure. An elegant wine, which is all about spice, restrained fruit and complexity. On the nose, hearthy aromas of cedar and tobacco, hints of forest fruits; on the palate is extremely powerful, warm and spicy with savoury notes of clove, dark cherry and coffee. Intensely rich and lay-ered, tannins are firm yet silky and velvety. It has great finesse with mouthwatering acidity and very long length of flavours.

Food Pairings
Hand made pasta or risotti. Red meat or boiled meat according to the Veronese tradition. Matured cheeses.

Winemaking
The grapes were hand-picked and carefully selected, dried in wooden crates for 4 months to achieve a high concentration of sugars. Cold maceration for 3-4 days has taken place prior to fermentation. Fermentation in steel at controlled temperature between 22-26°C for 40 days. Malolac-tic has been completed in steel and then the wine has been aged for 24 months in French oak barriques and tonneaux (70% of the wine in 225 liters barrels and 30% in larger 500 liters barrels), only new oak.

Style
This is an opulent and decadent wine. A wine of great concentration, loaded with layers of fruits, with great structure, power and finesse. It is still young but reveals its personality.
On the nose, intense aromas of forest fruits, cherry under spirits, cedar, cocoa and hints of leather. On the palate is rich, fleshy and complex with layers of dark fruit, clove, hints of chocolate and mocha. It has complexity and freshness, thanks to a good level of acidity and tannins are firm and silky. Extremely balanced with long, lingering finish.

Food Pairings
Matured cheese, red meat, risotto with Ama-rone, dark chocolate.
