Picàie Veneto IGT

Description
Appassimento is an ancient method that has been known since the times of the Romans: they left grapes to dry on the vine in order to concentrate their aromas and strengthen the flavor of the wine. In the area of the Venetiae, for climatic reasons such as cold and humidity, it was reinterpreted, picking the ripest grapes and leaving them to dry hung up in the old lofts (“Picai”). Thanks to this slow process of withering, one obtains greater concentration of the sugars in the grapes as well as a weight loss for the bunches of around 30%. Cecilia Beretta has used its experience to reinterpret this ancient technique in an innovative way for wines from outside the denomination, offering an original and interesting wine such as the I.G.T. Picàie

Style
Deep ruby red color with purple highlights, this wine has a deep bouquet with aromas of cherry and red fruits and hints of vanilla; of good structure, it is very soft and mouth-filling on the palate.

Food Pairings
Pairs well with red meats, venison and game, seasoned cheeses such Parmigiano Reggiano and Monte Veronese.
To be served at 18° C.
